Recipe Box | Roasted Cinnamon-Sugar Delicata Squash

On Thanksgiving, my aunt gave me a bunch of fruits and vegetables from her garden! One was a delicata squash. I didn’t know how I should cook it, so I looked up recipes and came across one for roasted cinnamon-ginger delicata squash from Averie Cooks. Since I didn’t have any ginger, I decided to go for cinnamon-sugar instead. It was so tasty! I’m definitely bookmarking this for future dinner ideas.

I followed this recipe, minus the ginger, and I added a little more sugar. They turned out to be wonderful lightly sweetened squash half-moons. Yum.

Do you have a favorite way of cooking squash?

Also, I just signed up for bi-monthly Farm Fresh To You deliveries and I received a red kuri squash. Any suggestions on how to eat one of those? I’m new to this. :)

Recipe Box | Thai Curry with Chicken and Vegetables

Thai food is probably my favorite type of food. (Besides pizza, because come on.) Last week, I visited my friends Ryan and Alissa. I gave Ryan photos from the wedding we shot a couple weeks ago, and Alissa gave me a lesson in Thai cooking. We made curry with chicken and vegetables. Most of the credit goes to Alissa. I mean, I chopped up some mushrooms. But that’s really all.

Ryan just got the fanciest new camera. A Canon 6D. It is so cool. He took most of these pictures, but I picked up the camera a few times. We put it on a tripod and took pictures from Ryan’s cell phone. What the heck?! It was amazing.

We made sticky rice to go with the curry. It was a delicious meal that I’m going to make again and again. Dinner was followed with pumpkin ice cream and a ton of youtube videos. We think Bruno Mars is the best.
